Chablis Chablis is a wine region in the northwest corner of Burgundy, situated roughly halfway between the Côte d'Or and Paris. All Chablis is made 100% from the Chardonnay grape. The Chablis area is an oceanic soils comprising mainly of Kimmeridgian limestone, which contain fossils, oyster shells, and other sea creatures from prehistoric times. This mineral-rich terroir produces chardonnay that often has a chalky and saline quality that makes it a wine prefect for seafood.
The winery is based at La Chapelle Vaupelteigne, 5Km from the town of Chablis with only 2300 people and (some amazing Charcuterie producing the best Andouillette I tasted so far), On the label, you will see 2 old tours which represent the entrance of the town of Chablis. Philippe took over the family vineyard in 1986 and became Organically grown since 1991 and has 14 hectares in production.
