Burgundy
A couple million years ago, Burgundy was covered by a sea, which created its limestone and marl (limestone-clay) soils. This soil composition is responsible for creating the desired minerality of Burgundian wines. The production of wine began with the Celts or Romans around 50BC. Around 6th to 8th centuries, kings began giving their land and vineyards to the church and monasteries maintained vineyards and the wine making. After the French revolution many vineyards which had been in the church's hands were sold to the bourgeoisie. The classification was formalised by the Beaune Committee of Agriculture in 1861. The years between 1985 and 1995 were a turning point in Burgundy. During this time most Burgundian domains renewed efforts in the vineyards and gradually set a new course in winemaking. All this led to deeper, more complex wines.
